Paleo Chocolate Chip Skillet Cookie

Ingredients

2 eggs, room temperature
½ C Erythritol (or other low carb sweetener like xylitol or monk fruit)
½ C coconut oil
2 cups almond flour
1 scoop Vanilla Collagen Peptides
¼ t ground cinnamon
½ t sea salt
½-1 C 100% cacao unsweetened dark chocolate chips for baking
Flaked sea salt, for topping

Directions

Preheat oven to 350 F.
In a large mixing bowl, whisk together eggs, Erythritol and coconut oil until smooth and creamy.
Add in almond flour, Vanilla Collagen Peptides, ground cinnamon and sea salt and whisk until well-combined.
Fold in unsweetened dark chocolate chips.
Pour cookie batter into a 10-inch cast iron skillet.
Bake for 20 minutes and let cool for at least 5 minutes.
Top with flaked sea salt, if desired.
