1 small avocado, pitted
1 hard-boiled egg, peeled
1 scoop collagen peptides
squeeze of fresh juice of lemon
Himalayan sea salt and pepper to taste
1 Tbsp. fresh mint leaves, minced (optional)
1 tsp. chia seeds or sesame seeds (optional)
1 piece gluten free bread, toasted (preferably grain-free coconut flour, almond meal or flax bread)
1. Mash avocado, egg, collagen peptides, lemon juice, salt, pepper and chopped fresh mint in a bowl.
2. Spread over gluten-free toast.
3. Sprinkle with sesame seeds or chia seeds.
Feel free to omit the egg if you have an egg intolerance or allergy or are following an autoimmune paleo elimination diet. The healthy fat from the avocado and protein from the collagen peptides make this a very satiating meal! I prefer grain-free bread made with coconut flour. almond meal or flaxseed, but you can use any gluten-free bread of your choice.
