Keto Kale Tabbouleh Salad

½ cup extra-virgin olive oil or avocado oil or hemp oil

¼ cup lemon juice

½ teaspoon sea salt

2 bunches of fresh parsley, chopped

3 cups raw kale leaves, chopped

1 cup yellow or red tomatoes, diced

¼ cup (24 g) chopped fresh mint

1 small garlic clove, minced

1⅓ cup (215 g) raw shelled hemp hearts

2 avocados, pitted, diced


Place the oil, lemon juice and sea salt in a large bowl.Whisk to combine. Add kale and parsley and massage gently. Add remainingingredients, toss to coat, and serve.
