Creamy Avocado Gazpacho

  • ½ cucumber, diced
  • 1ripe avocado pitted
  • 1 cup full-fat unsweetened coconut milk yogurt
  • ¼ cup fresh mint, minced (or 4 whole sprigs)
  • ¼ cup fresh basil, minced (or 4 whole leaves)
  • 1 small handful of fresh spinach
  • 2Tbsp. raw tahini
  • 1Tbsp. lemon juice
  • 1tsp. wheatgrass powder (optional)
  • 1-2scoops collagen peptides (optional)
  • Salt &pepper to taste (optional)


Simply add all ingredients into a blender and blend into a smooth, thick, creamy soup. Place in the refrigerator for 1-2 hours to chill before serving.  Top with white chia seeds, bee pollen or raw shelled hempseeds for an additional superfood punch!
